Ingredients
- 3 tbsp raw apple cider vinegar (with "the mother")
- 6 tbsp extra virgin olive oil
- 1 tsp ground turmeric, or 2 tsp freshly grated turmeric root
- 1 tsp grated fresh ginger
- ¼ tsp black pepper
- 1 tsp Dijon mustard
- 1 tsp raw honey or maple syrup (leave out for keto)
- A pinch of sea salt
Method
- Shake: put all the ingredients in a jar, put the lid on and shake well until golden and slightly thick.
- Use it: drizzle over salads, roasted roots, lentils, grains or cauliflower. Keeps for 2 weeks in the fridge; shake before using.
Why it's good for you: Turmeric, black pepper and olive oil are a classic combination: the pepper and fat help the body absorb far more curcumin, turmeric's main active compound. Vinegar with a meal may help soften the rise in blood sugar afterwards, and raw apple cider vinegar contains naturally occurring acids and bacteria.
Good to know: Turmeric stains, so take care with clothes and worktops.
