Ingredients
- 300 g mixed mushrooms (chestnut, shiitake, oyster), sliced or torn
- 2 tbsp extra virgin olive oil
- 2 garlic cloves, crushed
- A few sprigs of thyme, leaves picked
- 1 tsp tamari
- 2 tbsp nutritional yeast flakes (B12-fortified if you eat a plant-based diet)
- A handful of parsley, chopped
Method
- Fry the mushrooms: heat the oil in a large frying pan over a high heat. Add the mushrooms in a single layer and leave them for 2 minutes before stirring, so they brown rather than steam.
- Add the flavour: once golden, add the garlic and thyme and cook for 1 minute, then add the tamari.
- Finish: take off the heat, season with pepper, then scatter with the nutritional yeast and parsley.
Why it's good for you: Mushrooms are one of the few vegetable sources of several B vitamins, including riboflavin (B2), niacin (B3) and pantothenic acid (B5), which help the body turn food into energy, and shiitake bring immune-supporting beta-glucans. Nutritional yeast adds more B vitamins and, when fortified, vitamin B12, which is especially important on a plant-based diet. Pair it with the Classic Basil Pesto for another B-vitamin-rich favourite. Read more in The Hidden Kingdom.
