What you need
- 150 g mushrooms, sliced (chestnut, oyster or shiitake)
- 1 garlic clove, sliced
- A handful of spinach
- 1 tbsp extra virgin olive oil
- 1 tsp fresh thyme leaves
- 1–2 slices of Golden Linseed Loaf
- 1 poached egg, or 1 tbsp nutritional yeast flakes for a plant-based version
Putting it together
- Fry the mushrooms: fry the mushrooms in the oil over a high heat until golden, then add the garlic and thyme for 1 minute, and the spinach until wilted. Season.
- Toast: toast the linseed loaf.
- Serve: pile the mushrooms onto the toast and top with a poached egg or a sprinkle of nutritional yeast.
Why it's good for you: Mushrooms are rich in B vitamins, selenium and immune-supporting beta-glucans, and spinach adds magnesium and folate. On a slice of linseed loaf, this is a warming, low-carb meal that's ready in minutes. (Read more in The Hidden Kingdom.)
