What you need
- 280 g firm tofu, pressed and sliced
- 1 tbsp white miso, 1 tbsp tamari, 1 tsp maple syrup and 1 tsp grated ginger, mixed
- 1 tbsp coconut oil
- 250 g cooked brown rice
- 2 pak choi or a head of broccoli, cut up
- Sesame seeds, sliced spring onions and a little chilli, to serve
Putting it together
- Fry the tofu: fry the tofu in the oil for 3 minutes each side until golden.
- Glaze: turn the heat down, add the miso mixture and toss for 1 minute until sticky.
- Steam the greens: steam the greens for 3 minutes and warm the rice.
- Serve: serve the tofu on the rice with the greens, scattered with sesame, spring onions and chilli.
Why it's good for you: Tofu is a complete plant protein and a source of calcium and iron, and miso adds savoury depth and the goodness of fermentation. A satisfying, balanced plant-based plate in 20 minutes.
Good to know: Check the miso is gluten-free if you need it to be.
