Serves 210 minutesPlant-basedRich in fibre

What you need

  • 200 g hummus (homemade or good shop-bought)
  • A handful of olives
  • Crunchy vegetables: carrot, cucumber, pepper, radishes, chicory leaves
  • A few cherry tomatoes
  • Pickled vegetables or sauerkraut
  • A handful of parsley and mint
  • 2 wholemeal flatbreads, or our seeded crackers for gluten-free
  • Extra virgin olive oil, sumac or paprika, and a lemon wedge

Putting it together

  1. Dress the hummus: spread the hummus on a plate, make a swirl with the back of a spoon, sprinkle with sumac or paprika.
  2. Arrange: cut the vegetables into sticks and arrange everything around the hummus.
  3. Warm the bread: warm the flatbreads in a dry pan for 30 seconds each side.
  4. Serve: scatter with herbs and serve with lemon.

Why it's good for you: Chickpeas, tahini, olive oil and raw vegetables make a meal full of fibre, plant protein and healthy fats. Pickles and sauerkraut add a tangy, gut-friendly touch. A perfect lunch when there's no time to cook.
