Ingredients
- 4 tbsp tahini (light, runny tahini works best)
- Juice of 1 lemon
- 1 small garlic clove, crushed
- 1 tsp maple syrup or a few drops of stevia (optional)
- ½ tsp sea salt
- 4–6 tbsp cold water
- 1 tbsp chopped parsley (optional)
Method
- Whisk: whisk the tahini, lemon juice, garlic, maple syrup and salt. It will thicken and look grainy at first; this is normal.
- Add the water: add the water a spoon at a time, whisking, until smooth, creamy and pourable.
- Finish: stir in the parsley, if using. Keeps for 5 days in the fridge; loosen with a little water before using.
Why it's good for you: Tahini is made from ground sesame seeds and is a good plant source of calcium, iron, magnesium and healthy fats. Lemon brightens the flavour and adds vitamin C, which helps the body absorb the iron in the sesame and in the vegetables you pour it over.
