Serves 410 minutes, plus chillingPlant-basedGluten-freeKetoRich in magnesium and fibre

Ingredients

  • 2 large ripe avocados
  • 40 g raw cacao powder or cocoa powder
  • 50 g dark chocolate (85% cocoa), melted
  • 3–4 tbsp maple syrup, or stevia or monk fruit to taste (use these for keto)
  • 4 tbsp coconut milk or almond milk
  • 1 tsp vanilla extract
  • A pinch of sea salt

To serve

  • Raspberries, cacao nibs and a little grated orange zest

Method

  1. Blend: scoop the avocado flesh into a food processor. Add the cacao, melted chocolate, sweetener, milk, vanilla and salt.
  2. Make it smooth: blend for 2–3 minutes, scraping down the sides, until completely smooth and glossy. Taste and add more sweetener if needed.
  3. Chill: spoon into small glasses or ramekins and chill for at least 1 hour.
  4. Serve: top with raspberries, cacao nibs and orange zest.

Why it's good for you: Raw cacao is one of the richest food sources of magnesium and flavanols, plant compounds studied for their benefits to the heart, blood flow and mood. Avocado makes the mousse creamy and adds healthy fats and fibre, so it's satisfying without a sugar rush.

Good to know: Cacao contains a little caffeine, so it's best enjoyed earlier in the day if you're sensitive to it.
