Serves 410 minutes, plus 2 hours to setPlant-basedGluten-freeKetoAnti-inflammatoryRich in omega-3, fibre and vitamin C

Ingredients

For the chia layer

  • 400 ml tin coconut milk
  • 5 tbsp chia seeds
  • 1 tsp vanilla extract
  • Stevia, monk fruit or 1 tbsp maple syrup, to taste

For the berry layer

  • 250 g mixed berries (fresh or frozen)
  • 1 tbsp chia seeds
  • A squeeze of lemon juice

To serve

  • Fresh berries, toasted coconut flakes and mint leaves

Method

  1. Make the chia layer: whisk the coconut milk, chia, vanilla and sweetener. Leave for 5 minutes, then whisk again to break up any clumps.
  2. Make the berry layer: simmer the berries in a small pan for 5 minutes, until soft. Mash lightly, stir in the chia and lemon and leave to thicken for 10 minutes.
  3. Layer: spoon alternate layers of the berry mix and the coconut chia into four glasses or jars.
  4. Chill: chill for at least 2 hours, until set.
  5. Serve: top with fresh berries, coconut flakes and mint.

Why it's good for you: Chia seeds are rich in omega-3 fats and soluble fibre, which forms a gentle gel that's soothing for the gut and helps keep blood sugar steady. Berries are among the richest sources of polyphenols, which the gut microbes love.

Good to know: For keto, use stevia or monk fruit and keep the berries to the amounts given.
