Ingredients
- 1 ripe avocado
- Juice of 2 limes
- A handful of coriander
- 1 small garlic clove
- ½ green chilli (optional)
- 3 tbsp extra virgin olive oil
- ½ tsp sea salt
- 4–6 tbsp water
Method
- Blend: blend all the ingredients until smooth, adding water until it's creamy and pourable.
- Use it: drizzle over salads, grain bowls, beans, fish or roasted vegetables. Best eaten the same day; keep covered in the fridge to stop it browning.
Why it's good for you: Avocado is rich in heart-healthy monounsaturated fats, potassium and fibre, and these healthy fats help the body absorb the carotenoids in the vegetables you pour it over. Lime adds vitamin C and keeps the dressing bright green.
